✨ Cardamom Pistachio Barfi
A rich, fudge-like Indian sweet flavored with aromatic cardamom and topped with crunchy pistachios.
Ingredients
3 cups milk powder
¾ cup powdered sugar
⅔ cup whole milk
3 tbsp ghee or unsalted butter
½ tsp ground cardamom (adjust to taste)
Pinch of salt
1 tsp vanilla extract
2 tbsp chopped pistachios
Instructions
Combine & heat: In a large, heavy saucepan, whisk together milk powder, milk, ghee, sugar, and salt on low heat.
Cook gently: Stir continuously for 8–10 minutes, until the mixture comes together into a thick, fudge-like paste.
Add flavor: Remove from heat, then stir in vanilla and ground cardamom until fully incorporated.
Press & chill: Transfer the mixture into a parchment-lined pan, pressing it evenly into a ½-inch layer.
Finish & set: Sprinkle chopped pistachios on top and press them gently into the surface. Chill in the fridge for at least 1 hour until firm.
Serve: Cut into bite-size squares. Store in an airtight container at room temperature for up to a week—or refrigerated if preferred.
