Cardamom Pistachio Barfi

✨ Cardamom Pistachio Barfi

A rich, fudge-like Indian sweet flavored with aromatic cardamom and topped with crunchy pistachios.

Ingredients

  • 3 cups milk powder

  • ¾ cup powdered sugar

  • ⅔ cup whole milk

  • 3 tbsp ghee or unsalted butter

  • ½ tsp ground cardamom (adjust to taste)

  • Pinch of salt

  • 1 tsp vanilla extract

  • 2 tbsp chopped pistachios


Instructions

  1. Combine & heat: In a large, heavy saucepan, whisk together milk powder, milk, ghee, sugar, and salt on low heat.

  2. Cook gently: Stir continuously for 8–10 minutes, until the mixture comes together into a thick, fudge-like paste.

  3. Add flavor: Remove from heat, then stir in vanilla and ground cardamom until fully incorporated.

  4. Press & chill: Transfer the mixture into a parchment-lined pan, pressing it evenly into a ½-inch layer.

  5. Finish & set: Sprinkle chopped pistachios on top and press them gently into the surface. Chill in the fridge for at least 1 hour until firm.

  6. Serve: Cut into bite-size squares. Store in an airtight container at room temperature for up to a week—or refrigerated if preferred.
